Chef Bernie’s Caribbean comfort veggie recipe

My new Jerk Cooking Sauce is so easy to use, you can add it to any meat of fish or vegetables for a quick easy meal. Add at the beginning of your cooking for meat and fish and towards the end for veggies.

splash You can also add coconut milk to make it a tasty creamy sauce.

I have made this quite mild, if you want to heat it up try adding half a teaspoon of my Very Hot Sauce

Recipe:

Serves 2 people.

1 Jar of Chef Bernie’s Jerk Cooking Sauce

2 portions of Chef Bernie’s Rice ‘n Peas recipe

1 small sweet potato washed and cut up into chunks

A few pieces of dasheen cut into chunks

1 very ripe plantain (looking like a rotten banana) but it’s not! This one could be even blacker, when you open it you will see it’s perfect, the blacker it is the sweeter it will taste when cooked. Do not take it’s jacket off yet, your going to boil it in water, jacket on, until cooked, about 20 mins. Then strip it’s jacket off and cut into chunks.

Method:

Prepare the rice ‘n peas as per recipe

At the same time bring the dasheen to a rolling boil in a saucepan of water until it is tender.

Cook the plantain, boil it in water, jacket on, until cooked, about 20 mins. Then strip it’s jacket off and cut into chunks.

Roast the sweet potato in the oven at 200 deg. until soft

Put everything into a saucepan with the Jerk Cooking Sauce and cook together for another 5 minutes

Add salt & Pepper to taste

Serve with the rice ‘n peas
