Perfect on hot days, the zing of the lime just creates an amazing dessert. I always feel great eating raw desserts, packed full of yummy ingredients they are such a treat, a great way to make that special dessert!
Serves 4 – 15-20 mins prep time and 3 hours refrigeration or 1 hour freezer.
You will need a 5 inch springform tin, a food processor, blender and a fridge!
Make the base first
Using a food processor process together until fine.
- ½ cup of unsalted cashew nuts
- ¼ cup of desiccated coconut
- 6 small fresh pitted dates
- 1 dsp of raw cacao powder
- ¼ cup of walnuts
Lightly grease your tin with coconut butter or similar and then press the mixture down into the tin it should stick together when you push down
For the topping
Blend together in a blender
- ½ cup of soaked cashew nuts
- ½ avocado
- ¼ cup of virgin coconut oil
- ¼ cup of maple syrup
- 1 whole lime skin on + the juice of another lime
- ½ tsp natural vanilla extract
- Small pinch of sea salt
Poor onto of your base smooth over and refrigerate for 3 hours or until set
Decorate, I used edible flowers for this one, grated a tiny bit of lime zest and sprinkled on with a little coconut.
