This is a delicious fish dish, see the video where we use salmon with the herbs as an alternative, giving you a taste sensation! Continue reading Herbed Fish With Coleslaw and Mango Sauce
Another one of our series of things to cook with our sauces – Facebook Live COOKIN’s
Last night we made a really tasty black bean stew, so good dressed with avocado, healthy and nutritious, we used our Chef Bernie’s Tomato Ketchup to give it depth and flavour.

This is a favourite dish of Caroline’s who introduced me to Halloumi when I came to the UK. I had never eaten it in St Lucia so it was a completely new taste for me, what I love about it is its ability to be fried and stay whole and the salty taste, it goes really well with the vegetables in this recipe and the mango sauce just gives it a tangy, chilli heat without being too hot. I think you will love it but let us know! Continue reading Caribbean Sunshine Supper
Both Caroline & I love pasta cheesy dishes when the winter is in full swing as it is now in the UK. Being from St Lucia we would be eating Mac & Cheese instead even though its hot! I love how versatile pasta is and we tend to use different types, gluten free too sometimes as there are some very good choices to be had. Anyway try this one out I think you might like it as much as we do. Continue reading Cheesy Bacon Pasta with Sweet Pepper & Mustard Sauce
I have to say this is one of the best curries we have eaten this year! I hear some of you saying ‘Banana Ketchup’ thats weird and we say yes it is but don’t knock it until you’ve tried it!
This is comfort food at its best! Caroline made this the other evening for movie night, I added some of my Very Hot Sauce you might want to try it both ways. Continue reading Chicken & Mash
This is the time for slow cooked casseroles, deep winter colours and food to keep you warm. The beetroot gives it extra colour and a tasty, slightly earthy flavour, just don’t wear a white T shirt when you are eating it.
Recipe serves two hungry people, best cooked in a slow cooker or casserole
Cook for 4 hours on high heat in a slow cooker, longer on a low heat OR casserole in the oven for 2 hours on 180℃
This is a great salad which we think balances out meat dishes perfectly. Continue reading Crispy Avocado Salad
