Caribbean Sunshine Supper
This is a favourite dish of Caroline’s who introduced me to Halloumi when I came to the UK. I had never eaten it in St Lucia so it was a completely new taste for me, what I love about it is its ability to be fried and stay whole and the salty taste, it goes really well with the vegetables in this recipe and the mango sauce just gives it a tangy, chilli heat without being too hot. I think you will love it but let us know! Continue reading Caribbean Sunshine Supper
Chicken & Mash
This is comfort food at its best! Caroline made this the other evening for movie night, I added some of my Very Hot Sauce you might want to try it both ways. Continue reading Chicken & Mash
Smokey Hot Lamb with Beetroot
This is the time for slow cooked casseroles, deep winter colours and food to keep you warm. The beetroot gives it extra colour and a tasty, slightly earthy flavour, just don’t wear a white T shirt when you are eating it.
Recipe serves two hungry people, best cooked in a slow cooker or casserole
Cook for 4 hours on high heat in a slow cooker, longer on a low heat OR casserole in the oven for 2 hours on 180℃
